I usually install them with each new project. Here's a list of must-have plugins when it comes to my e-commerce site:
WP Super Cache or W3 Total Cache: Caching plugins are essential for improving website speed. By caching pages, it reduces server load, shortens page load time, improves user experience and SEO ranking.
Elementor or WPBakery Page Builder: These visual page builders are great for easily creating custom designs without code. Elementor, in particular, is the one I often use to provide highly customized layouts and designs for most websites.
Wordfence Security or iThemes Security: Website security is a necessity for every new WordPress site. These plugins help detect malware, block malicious IPs, set up double authentication, and more to ensure your site is safe from hackers.
WooCommerce : WooCommerce is the most popular e-commerce plugin for WordPress and it is almost a must-have plugin if my project involves selling products or services online.
Contact Form 7 or WPForms: Whether it's for displaying company information, product inquiries or after-sales service, a powerful contact form plugin is always needed on a website to improve the ease of communication for users.
Akismet Anti-Spam: This plugin helps me to prevent spam comments and keep the comment section clean while reducing server stress.
Advanced Custom Fields (ACF): ACF is used to extend the content management capabilities of WordPress to allow for custom fields, which is especially useful when there is a need to add more customized content to different pages or products on the site.
If there is anything else you need
UpdraftPlus: A backup for your website, needed to regularly back up your website data to cloud storage in case of data loss or quick recovery in case of a website crash.
Yoast SEO or Rank Math: Plugin that boosts the SEO of your website, used to optimize page titles, meta descriptions, XML sitemaps, breadcrumb navigation and more.
Other small plugins are sometimes added, the fewer plugins the smoother it is.
